I Heart Mondays

I know, I know...most of you are probably thinking I'm crazy for loving Mondays! I will admit, I used to strongly dislike them along with the likes of most of you.


But I have my reasons for the change of heart about this day of the week...


Our Saturdays are often busy [on a side note : this past Saturday we drove out of town to attend a wedding - the groom was in our youth group a few years ago and the bride's mother was our college ensemble/choir instructor. We also had the fun chance to hang out for a bit with some college friends of ours!].


Our Sundays are ALWAYS busy, since they're a "work day" for Tony as a youth pastor. So Tony's day off each week is Monday. We call it our "family day." And I look forward to it every week! It's a day for us to just relax and hang out together and catch up on rest [all 3 of us took naps yesterday!]. I also try to take advantage of the time that Hannah Beth and Tony can spend together and run to the gym for a bit.


Yesterday, we took Hannah Beth to her first swim class! She loved it; she's like a little fish!
I also had a chance to make this delicious salad with our supper while Tony took HB on a walk - it was a beautiful evening.

STRAWBERRY SPINACH SALAD
8 oz. spinach, fresh
1/2 pt. sliced strawberries
3 med. mushrooms, sliced (optional) - I didn't add these.
1/2 c. slivered (I used sliced) almonds, toasted
chopped red or white onion (optional) - I did add this.
I also added blueberries - yum!

Arrange in bowl.

Dressing:
1/4 c. light brown sugar
1/4 c. white sugar
1/4 c. vinegar
Mix and bring to a boil. Do not boil, stir to blend and dissolve sugars. Drizzle over salad just prior to serving. (I didn't want my spinach to wilt, so I chilled the dressing for a bit before drizzling it.) Top with almonds.



And here's our silly little 11 month old munchkin, who loves to find the most random things to play with, like a string she pulled off of our old rug or daddy's hat! Love that girl!
